Message heat transfer. A large capacity for absorbing heat will be meaningless if you cannot move the heat from the engine body to the coolent. Heat transfer is determined by the following equation

H=UA(Delta T) where
H is the heat transfered,
U is the overall heat transfer coefficient
Delta T = the temperature difference between the heat source and the heat sink.

U incorporates several factors, including the conductivity of the engine block (corrected for any corrosion), but factor most effected by the coolent properties is the water side film coefficient. Water has a reasonalby favorable film coefficient, but the addition of antifreeze degrades this considerably due to the increase in surface tension. The addition of surface tension reducers (e.g. Redline Water Wetter, Purple Ice). Improves the heat transfer from the metal surface into the bulk liquid.
